350 g. Red Cabbage
1 Apple
3 leaves Kale
1 Red Onion
1 Spring Onion optional
Orange Dressing
150 g. Orange Juice
1 tbsp. Apple cider vinegar
1 tbpsp. Tahini paste
1 tbsp. Dijon mustard
a dash Cinnamon powder
2 tbsp. Flax Oil optional

      I love red cabbage as much as I love kale, and a combination of them together with citrusy fresh notes in this slaw is amazing! This red cabbage and kale slaw is sweet,  crunchy, fresh, antioxidant and vitamin-rich with Winter and Christmas vibes because of Orange dressing and cinnamon.  In winter months it is very important to incorporate vitamin C-rich foods into our diet to be able to support the immune system.       Can I cook it as a part of my  Christmas menu?

      Definitely! This red cabbage and kale slaw is not only healthy but also sweet and delicious, it is a good option for both vegan and non-vegan people at a Christmas table. You can serve it in a salad bowl, or as I did, be creative and serve in individual plates or even wine glasses topped with fresh orange slices.  This salad becomes richer in flavor as it sits. So I recommend making it in a few hours in advance to be able to enhance the flavor.

      This red cabbage and kale slaw is customizable,  you can add pieces of orange instead of an apple, olive oil or no oil at all instead of the flax oil. I personally always use flax oil for salads as it is very high in Omega-3 and the fishy flavor is not noticeable. I like avocado oil as well. If you live oil-free, you can omit the oil part altogether as we are using tahini in the dressing as well.

      Does kale or red cabbage need an additional preparation?

      I prefer using completely fresh cabbage and kale in this recipe, all you need to do is thoroughly wash them and chop. However, to make kale softer, I like giving it a little “massage” with my hands before putting it into the salad. Another trick to make kale soft immediately is to rinse it with hot water through the sip. But it is important not to overcook it, so just do I very quickly. As soon as the hot water touches kale, it immediately becomes very soft.

      Red cabbage and kale slaw

      Finely chop or process red cabbage with an apple. Then slice the onion, chop spring onion and kale( without the middle hard part).


      Squeeze orange juice and mix it well with all the dressing ingredients mentioned in the ingredient list.


      Mix the dressing with the salad and let it sit for 30 minutes or even several hours to enhance the flavor.
      Serve with orange slices!
